| The Coolmans ready for the big day |
We had the unique opportunity of celebrating the coming of two beautiful girls to our friends, Adam and Staci this weekend with a couples adoption shower. There was an extensive guest list, but we were able to smoothly accommodate over 75 guests in the Coolman's home with an open house celebration. Staci had the house is perfect condition when we arrived to prepare food on Saturday. The girls, Maggie and Riley, have a beautiful room awaiting them but have an even more beautiful family who can"t wait to meet them. God has huge plans for the lives of these two girls and they don't even know it yet. I get chills just thinking about the way the girls have blessed the lives of others already.
Food was an important part of the party. We also found it fun to plan and prepare. We had a lot of fun with the Chinese theme for this shower. Although fortune cookies are not really chinese, we decided to go with it anyways. They make for cute decorative elements when you put them in a trifle bowl. We also found that layering the cupcakes and chocolate dipped strawberries was appealing to the eye. I had several requests for recipes during the shower so I wanted to share them here.
Brownie Truffles
1 box of brownies
1 bag of semi sweet chocolate chips
½ cup creamy Peanut butter
Bake brownies according to box, baking closer to the minimal time. Let brownies cool for 20 to 25 minutes. Once cool enough to handle, begin taking the brownies and shaping them into balls. Place them on a parchment lined baking sheet. Place them in the freezer for about an hour to an hour and a half so they are firmly set. Next melt together the PB and chocolate chips in a microwave safe bowl. Roll each brownie ball in the mixture. Once again, place on the parchment lined baking sheet. Return to the freezer for 30 minutes or until set (if desired). These can be served room temperature, and if you’re not going to eat them all at once (good luck!), I’d store them in the refrigerator. These freeze well too. Each batch makes 20 to 22 (this depends though on the size you prefer).
Cucumber Sandwiches
1 block of cream cheese
½ cup mayonnaise
1 packet of dry Italian dressing mix
1 loaf of French bread (where the croissants are found)
1 cucumber
Bake bread according to package. Let cool completely and cut. Meanwhile, mix cream cheese, mayo, and seasoning pack. Once the bread is cut, generously spread each piece with the cream cheese mixture. Place a cucumber on top of each piece and serve (you don’t place another piece of bread on top). Makes 20 to 22 sandwiches.
1 Large Napa Lettuce
5 Green onion stalks
Chop both
Saute 1 stick of butter, small pack of slivered almonds (1-11/2 cups), 1/2 cup sesame seeds, 3 packs of Ramen noodles (without seasoning) smashed. Brown and cool.
Dressing: 1 cup Vegetable oil, 2 TBSP soy sauce, 1 cup sugar and 1/2 cup white vinegar. Mix a day in advance so sugar dissolves.
Combine everything immediately before serving. Toss and serve!
